BEIJING, Feb. 3 (Xinhua) -- Chinese pancake, a characteristic local food in east China's Shandong Province, is one of the main staple food for Linshu people, in Shandong.
The process of making a pancake is very complicated, with a special tool called Aozi, meaning the iron pancake utensil.

In Linshu, all kinds of grain can be used as raw materials for pancakes, including millet, wheat, corn, sweet potato.

In recent years, with the development of commodity economy, almost every village in Linshu has a pancake shop, which sells Chinese pancakes cooked with mass production method by machines. However, the most popular pancake is still the handmade one, because of its texture and flavor that cannot be replaced by a machine-made pancake.
